And if you’re looking for some traditional bush
tucker to whip up for your family and friends,
nothing beats a classic damper. So here’s a twist
on an iconic Aussie dish with bacon and eggs –
perfect for brekkie or an arvo snack.

INGREDIENTS
M M 3 cups self raising flour
M M 2 eggs
M M 1 cup milk
M M 3 bacon rashers
M M 1 cup grated cheese
METHOD
Mix flour, diced bacon and grated cheese. Add
a beaten egg and half of the milk, and mix until
combined. Add the rest of the milk, until a wet dough
is achieved. Place in an oiled cake tin onto a trivet
in the camp oven, or you can place straight onto
an oiled, foil-covered trivet if you don’t have a pan
handy. Make a hollow in the top, crack in one egg and
sprinkle some cheese on top. Cook for 35 minutes.
Get a little adventurous and try something new the
next time you go camping. But most importantly,
don’t forget your fire-starters or the cold beers to
wash down your tucker with.
