PERFECT PAELLA

INGREDIENTS
• 2 chorizos
• 2 dozen peeled prawns
• 1 red onion
• 1 small capsicum
• 1 / 2 cup frozen peas
• 1 1 / 2 cups of short grain rice
• 2 cups of stock / water
• 2 tablespoons of tomato paste
• 1 teaspoon of garlic
• 1 teaspoon of turmeric
• 1 teaspoon of sweet paprika
• Olive oil
• Salt / pepper
METHOD
1 . Splash a generous amount of olive oil in a large frypan . Fry the spices and garlic for a minute , add the onion and chorizo , and continue to fry for a couple more minutes before adding the capsicum , peas and rice .
2 . Continue stirring until the rice is translucent . Add the tomato paste and stock , stir and bring to the boil . Add salt and pepper .
3 . Reduce the heat to a low setting and add the prawns . Give it all one last stir , and then place the lid on the pan and cook for 15 minutes . Taste the rice ; if not cooked , leave it for another five minutes . Stir and garnish with chopped parsley , and serve . Magnifico !
