I LOVE THIS RECIPE BECAUSE IT ' S AN EASY ONE-PAN DISH COMBINING SOME OF YOUR FAVOURITE HEARTY BREAKFAST INGREDIENTS !

INGREDIENTS
• 2 cans of cannellini beans
• 1 jar of passata
• 1 onion
• 1 red capsicum
• 250g of bacon
• 4-6 eggs
• 1 teaspoon of garlic
• 1 teaspoon of cumin
• 1 teaspoon of oregano
• An optional splash of Tabasco sauce
• Olive oil
• Salt and pepper
METHOD
1 . Chop the onions , bacon and capsicum .
2 . Fry in olive oil , adding the garlic , herbs and spices , and then cook until the onion has softened .
3 . Drain the cannelloni beans and add them to the pan . 4 . Pour in the passata and stir .
5 . Simmer until the sauce is a nice , thick consistency ( about 5-8 minutes ).
6 . Bring the temperature down to minimum and make a small well in the bean mix , and then crack an egg into each hole .
7 . Put the lid on the frying pan and cook until the eggs are done to your liking . Add Tabasco sauce and garnish with parsley if you wish .
8 . Serve with a nice , crusty bread !
